Dr. Mariem ELLOUZE is a Senior Microbial Risk Assessment Specialist at the Institute of Food Safety and Analytical sciences at Nestlé Research in Lausanne, Switzerland. Dr. Ellouze has an Engineering degree from the National Institute of Applied Sciences and Technology, a Master degree in Innovation in the Food Industry and a PhD in Risk assessment. Dr Ellouze has written several scientific publications and book chapters on the topic of predictive microbiology and microbial risk assessment, she has also animated different workshops and webinars and presented at different conferences and symposia.
In her current role, Dr. Ellouze evaluates existing and new products/processes/concepts, provides technical assistance and scientific advice and develops tools and guidelines to help Nestlé R&D centers and Operations to conduct microbiological risk or exposure assessments.
Dr. Ellouze also contributed to scientific achievements in the field of microbial risk assessment and predictive microbiology through activities during her service of two years as secretary of the International Committee of Predictive Modelling in Foods (2015 to 2017) and as chairwoman (2017 to 2019). She has organized the Predictive Microbiology Conference in 2013 in Paris, France and participated to several scientific committees for different conferences. She is now the project leader of the ISO working group on the determination and use of cardinal values.
